Cooking with Charlie: episode 3

‘Cooking with Charlie’ is back for another edition, and this time he has two delicious recipes to share.

Charlie is based at Post-19, a service that focuses on preparing autistic learners for adulthood. Each learner has an individualised curriculum based on the four strands of Preparation for Adulthood, one of which is vocation and employment. Charlie loves to cook and wants to pursue it as a career path when he finishes education, and therefore his curriculum is geared towards the skills he needs to achieve that. A word from Charlie

Hi all and welcome to my 3rd blog, in this post I will be making vegan burgers with gherkins inside and chocolate cookies.

Vegan burgers

I came up with this recipe by myself as I wanted to make something eyewatering and tasty for those in the hub that are vegan. I also wanted to try something new and challenge myself to make something I have never done before.

Ingredients you need for this recipe: 

  • 2 burger buns sliced
  • 2 vegan burger patties
  • 12 sliced gherkins
  • Splash of vegetable oil

Step by step guide on how to cook this recipe: 

  1. Firstly, get the buns ready by slicing them into half and making sure they were ready for the vegan patties to be placed inside.
  2. Slice up the gherkins and put them in a bowl so they can be put on the vegan burgers once they are cooked
  3. Get the pan ready and make sure to heat up the cooker. Once the cooker is heated, place the pan on the stove and put veg oil in the pan and wait a couple of minutes for it to heat up.
  4. Place the vegan patties in the pan and make sure they are cooked 2-3 minutes each side.
  5. Lastly, place the vegan burgers in the bun and place the gherkins on top and it is ready to serve.

 

Chocolate cookies

I chose this recipe, because I saw one of the contestants make it on The Great British Bake Off a few years ago and I was really interested to make it myself.

Ingredients

  • 145g of butter
  • 300g Caster sugar
  • 1 egg
  • 190g of Plain flour
  • 200g of dark chocolate chips
  • ¼ tsp of salt
  • 1 tsp vanilla extract

Step by Step guide on how to cook this recipe 

  1. Preheat the oven to 190 C and line two baking trays with baking paper
  2. Mix butter, sugar and mix it altogether until light and fluffy. Then add the egg and mix it together.
  3. Then add the dark chocolate to the bowl and add the salt and vanilla extract.
  4. Once it forms into a dough, put them into round shapes and flattened them and place them on the baking tray ready to put in the oven.
  5. Then bake the cookies in the oven for 10-15 minutes.
  6. Once cool, they are ready to enjoy.
